    Vanilla, as an ingredient, has made an appearance in Bourbon County lineups over the years, but the 2024 Bourbon County Brand Vanilla Rye Stout is a new take on our 2014 Vanilla Rye release. This year’s release showcases rye and the complexity it delivers by starting with a rye imperial stout and aging it in freshly emptied rye whiskey barrels. After aging in barrels for a full year, the stout is then finished with incredibly aromatic madagascar vanilla beans. Bourbon County Vanilla Rye Stout has the beloved attributes of the vanilla variants before it–with a new characteristically rich spice character from aging in the rye whiskey barrels.

    There is nothing quite like the comforting aroma that fills the home when baking with family. Inspired by late nights in the kitchen with Mom, Goose Island employee Paul Spiller sought to capture that sweet moment in this year’s newest member of the Bourbon County Brand Stout family. 2024 Bourbon County Brand Macaroon Stout is an imperial stout aged for a full year in bourbon barrels before adding rich cocoa nibs, sweet candied ginger and toasted coconut. This decadent stout is an homage to the flavors of homemade coconut macaroons with a twist of nostalgia.

Barrels are such an important ingredient and we continue to use only the best our friends on the bourbon trail have to offer. 2024 Bourbon County Brand Original Stout is aged in a mix of freshly emptied bourbon barrels from Buffalo Trace, Heaven Hill, Four Roses and Wild Turkey distilleries. Barrel-aged for an average of 12 months, Bourbon County Original Stout boasts deeply developed flavors of fudge, vanilla and caramelized sugar with a rich, decadent mouthfeel.

    Every year since its inception in 1992, we strive to honor the original Bourbon County Stout recipe. And, 30 years later, we continue Gregory Hall’s legacy and passion for making the best beer possible, starting with the best barrels the bourbon trail has to offer. This year, our Imperial Stout is aged and blended from freshly emptied bourbon barrels from Heaven Hill, Four Roses, Wild Turkey, and Buffalo Trace distilleries. Expect flavors of vanilla, dark chocolate, toffee, molasses, almond, and dried fruit.

    Inspired by the Italian desserts of her childhood, Jill Cerone, People Manager at Goose Island, dreamed up this variant after grabbing a box of chocolate-dipped biscotti from her cabinet. Working with the brewing team, Jill brought the flavor to life with notes of anise, marzipan, cocoa, and buttered toffee. The biscotti enhances flavors already found in our Bourbon County Stout and adds strong notes of nostalgia from your Italian grandma’s kitchen.

    For years, brewers at Goose Island have brainstormed ways to incorporate figs in Bourbon County Stout, but faced a daunting task due to their subtle flavor. After fresh thinking from members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa's childhood memories of stealing fig cookies out of her grandma's cookie jar during her summers on Lake Michigan. And thus, the fig cookie and graham cracker-inspired Sir Isaac's Stout was created. Highlighting the dried fried profiles extracted from the bourbon in the barrels, our brewers used Black Mission figs (10,000 pounds of them, to be specific) to create this variant resulting in characteristics of dried fruit, honey, molasses, and citrus, all reminiscent of the classic fig cookie sold on shelves today.escription

    Oil of Aphrodite is an American double stout brewed with locally harvested black walnuts and Belgian candied syrup. English, German, American and Belgian malts are accompanied by Pacific Northwest hops, creating a sweet and rich springboard for deep nuttiness. This stout was aged in bourbon barrels for 8 to 12 months creating an amazing brew worthy of goddesses and gods alike. Fancy Sours & Geuze

    A true Geuze. A blend of 1, 2, and 3 year-old lambic unfiltered and unpasteurized and aged in the bottle for at least 6 months after blending. Continued fermentation in the bottle give this Geuze its famous champagne-like spritziness. The lambic that goes into it is brewed only with 60% barley malt, 40% unmalted wheat, aged hops, and water, spontaneously fermented by wild yeasts, and matured in oak casks. 3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time. Lambic and Geuze are living, cultural heritage rooted in the Zenne valley!     3 Fonteinen Oude Geuze Cuvée Armand & Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. This cuvée, like all of our lambic, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. Traditional Lambic is living, cultural heritage rooted in the Zenne valley! Taste, savour, enjoy, and experience this unfiltered, unpasteurised, and unadulterated beer with friends new and old!

    Innovative, yet rooted in tradition, this special collaboration release is a blend of our Sabro dry-hopped sour ale, Le Terroir, with a one-of-a-kind lambic beer from our good friends of Belgian brewing fame, Oud Beersel. After maturation in oak wine barrels, and before being shipped to Colorado, unripe green walnuts picked fresh from their orchard are added to the lambic. With many years in the works, we hope you enjoy this truly unique drinking experience from two passionate brewers on two different continents.
